Platanos en dulce

This is one of those things that tends to get made for Easter or other holidays. The recipe seems to be in the head of the cook, but the ingredients are platanos, cheese, dulce, and cinnamon. This particular one came out exceptionally well to my tastes with just the perfect blend of moisture from the fruit, richness from the cheese, and sweetness from the dulce. I don`t think I could have beat it with a $4 slice of cake from a fancy restaurant.

It`s also a good recipe to use up overripe platanos that will shortly go bad.

I searched this site to see if someone had brought it up before but didn't see anything. It may be of interest for people setting goals in their Spanish acquisition.

Paperwork fees and requirements

I now have all my paperwork back from the different US state agencies, police report, doctor's report, etc. for submission to the Nicaraguan Embassy state side, but would like to make sure I have all my ducks in a row prior to submission.

So what needs to be notarized prior to submission and what are the current fees for having my paperwork approved and anything else that I might be overlooking at this point. I would like this to go smoothly and be ready to head down as soon as I receive it all back. Thanks.
