![]() Took this picture of the kitchen in action. Took notice that the lady cut the raw meat and the tomatoes with the same knife on the same surface. Not sure if this is a good idea. In Nicaragua all is good! Great meal and will return again. ( categories: )

i like the way
in Nicaragua, people keep the eggs out on the counter in the 86degree heat, and we keep ours in the refrigerator here. they taste the same in the long run, it just always gives me the creeps, when im on duty to break the eggs, and i look in the carton and pick up an egg and little bugs crawl out from everywhere. lol. but theyve never made me sick...*shrugs* like yall've said, anything goes.

The need for refrigeration depends
on how long you want to keep food from going bad. And "bad" is a relative term with some foods.
The use of the cutting board and knife for both raw meat and raw vegetables is a no-no. But it's not unique to Nicaragua. Having been to many church dinners in the US, you'll find same problems here. I am careful when I eat out, usually sticking to cooked items (but not always), avoiding salads.
I have to admit that the only time I have gotten sick in Nicaragua, it was from my own cooking. I was cooking banana pancakes for a group and made the mistake of tasting the batter to make sure it was sweet enough. The little bit of batter on the tip of my finger was enough for an infective dose of Salmonella. I was out of commission for 24 hours (I have some antibiotics that knocked it out of me). But I've never had a problem with local food (yet).

Preparation surfaces and cutting equipments for raw meat must be very distinct from the preparation of vegetable and other ingridients.
I say usaully because if you are cooking the vegetables afterword, you are then killing the bacteria, so that makes it ok.
This case shown in the picture is an example of very bad practice,this can be extremely dangerous because the tomaotes are used in a salad, therefore the bacteria of the raw meat will have infected the vegetables and could cause serious problems for those people whose antibacteria are very low.
But as you said anything goes in Nicaragua, but if I were in your shoes I will not eat too much in places like those.

Once Sick
Never sick in Nicaragua but for one time. Four days worth in SJDS.
I had the salad before my meal. I had been in country 2 months at this point so anything goes. Some friends told me not to eat the salad because the water they use to wash has the bacteria in it. Now I think it may have been some cross contamination with meat.
Are there any comments by members on this topic and what to avoid? You can't inspect every kitchen for safety. Eating out is a good part of the fun in Nicaland.
Advice given to me
Was when the power goes out start a hunger strike. It took awhile but after the power went out i would eat cause i was hungry. MISTAKE i had to repeat this mistake at least 5 times to become a believer. Never been sick when the power was on from food. I think its cause the waters off too, so no one washes their hands while preping de comida. The problem is when the powers out now i tend to drink more alcohol. Then the shit starts from all the religion around me drinking is bad mucho mal por tu cuerpo, fingers wagging in my face. Now i just smile as the person saying this to me is drinking a glass of water drawn from a well ten feet from from the neighbors septic tank. When the sun comes up in the morning i am fine the other person is asking me for money for the doctor. Over and over i have been through this but for some reason the religious persons seems to prefer the water and critisize those around them. I know some peoples in Nicaragua feel superior because they consume no alchohol but guess what if the foods bad and you drink a nica libre or three with the meal no bacteria can survive it, Drink Ron he will protect you and lead you down the path of doom and drunkenness but at least its better than puking for a few days, then some shots and pills. Thats my experiance in justifing alcholism while my gilrfriends family and friends are just down right not feeling well. She actualy was able to figured it out. When i reach for the rum she finds her glass too, now we both kick it on the beach while the rest of them well there at the clinic. Wise tail or not i know it works for me.
