Bevo, mascot for the National Champion Texas Longhorns. with all the talk of cattle lately, i had to put up my favorite.

Roger's actually talking about getting a Longhorn. Don't know why, maybe he just likes the way they looks.

We saw a gorgeous one in Managua. Okay just it's head on the wall at the Santa Fe restaurant in Managua, but it was gorgeous. It was merle, just like our Catahoula Gumbo. Too pretty.

First place we'll check is with the Seminole Indians here. They should have the right connections for getting one, if nothing else.

Watusi cattle have bigger horns and would love the Nicaragua climate. No thanks, they're ugly as all get out. Kinda looked deformed.

Longhorns look much more handsome to my eyes, stately if you will.

Restaurante Santa Fe?

Next time that you go there to eat, please show them how to prepare proper Tex-Mex Tacos, Burritos, & Enchiladas.

BTW/ Marisol's niece (Ruth Guterriez) has worked there as a waitress since the place opened a few years ago in Bolonia. Get her to serve you the next time and tell her that you & Roger know Marisol & Alan from Puerto Cabezas. Give her a good tip because you will have great service.
