Grilling Nicastyle...

After two years of grilling on those cheap, metal grills found in Catarina, I finally got a decent toy to play with.
Last week, Roger took me to Ladrilleria Avellan (only two blocks from our house in Jinotepe, 883-0273), and we ordered a grill with a prep work shelf. The owner spoke great English, and our grill was ready in 5 days. Total cost 800 cordobas, or a little over $47.
The old fenceposts Roger's workers have been pulling up on the finca are making awesome firewood, they light quickly and burn down into nice coals.
We've got the grill in the front yard, and have been dining alfresco for the past two nights. Pineapple and soy sauce marinated pork chops two nights ago turned every head that went past. And tonight's caramelized onions done in the cast iron skillet actually made a guy fall off the sidewalk 'cause he was so busy looking back at us instead of where he was putting his feet. *L* Now that's what I like...free entertainment with dinner!

I like to start mine with FAT pine lighter wood and use the ¨crabble or nansiti wood allowed to burn down to coals, and what a nice flavor it adds to the cookin' I like the smoke flavor of this better than using the guyaba leafs for the smoke.
Oh Yea, puts some nice flavor in the beans too!

I always start my fires
using an Alton Brown tip, crumple up a sheet of black/white newspaper and sprinkle with a little cooking oil. It lights quickly and stays lit long enough to catch the surrounding wood on fire, every time.

He's hilarious. One of my favorite TV stars. I especially appreciate his scientific explanations of cooking. It's a guy thing.

great guy to boot! We did our food shopping at the same place, Harry's Farmers Market. He even told me once, when I mentioned how I used his book "I'm Just Here For The Food" to homeschool Logan for science and cooking class, that he wished he was smart enough to homeschool his kids.
Guess he's pretty smooth too, huh?!

I think my wife would like to home school me in cooking. I learn a lot from Brown, but not enough to be competent in the kitchen.
