Cooking with wood

A lot of cooking is done with wood in this region. This doesn't mean cutting down 10 or 20 year old alder trees but just using tree branches that are available.

This photo is of the kitchen of a little restaurant in Estelí that has great nacatamales and will make vegetarian ones upon request. The vents in the wall are to allow the wood smoke to escape.

are you talking about the carbon particles that smoke has in it that are carcinogenic?
