I’ve heard the green female iguanas are better… and they have eggs to boot. I had enough trouble acting like I really enjoyed this home cooked meal after our neighbor went to so much trouble. It was surprisingly tasty when washing it down with plenty of FDC. This was my first meal in Las Iguanas. Lesson #1 in preparing an iguana – never tie it with a nylon cord as you see in the photo. He ate through the cord and bolted. The kids who sold it to us couldn’t have been happier. They were able to sell it to us twice and the price went up the second time.

In the Managua markets they sew up the mouths and sew the legs to thier bodies before the iguanas are put up for sale.
