If you are going to eat much soy, go for tempeh which is fermented. If you can find the culture, it is really easy to make. Also, buy Tamari rather than ordinary soy sauce which is fermented and wheat free.
As for the GM issue, you are right but that doesn't make GM wheat or corn a good alternative. There was a NL member who was supposed to be involved in growing organic soy in Nicaragua but I haven't heard from him in a few years.
