Whats the going price?

Lowest price I ever saw was at Mercado Oriental for 10 Cordobas back on 2009. Peak season is 1st week in August in Nicaragua. The ones we have here in Florida bloom night of full moon in August or thereabouts. We hand pollinate with a soft brush.

Look at all those colours!

a sunny day

really brings out the colors. Another time the market is colorful is before the Day of the Dead and other holidays when flower sales are way up.

What's that in the bag

to the right of the pitaya?

Chayote

A squash. Good addition to soups etc.

Details

Wikipedia does a good job with the details. It includes telling you can eat it raw which surprises many but it is quite tasty. Also, while I have never eaten it, you can also eat the roots.

I like it raw better than cooked

Goes well with dips.

Chaya

is the name used here. It is a relative of the other squash known as ayote but doesn't have the big orange flowers.

It grows well here but we lost ours during the past 2 years of heavy rains. Probably a site with better drainage would help. Also, it tends to get beat up by the wind when planted on a chain link fence. If you have an overripe fruit it will sprout roots and you can plant it shallowly. Plants eventually get quite large and quite productive. they are perennial.

Normal variation includes plants that provide light or dark green fruit and with or without spines. Older fruits are cooked with beans. My wife was unaware that you can est the roots but since that will kill the plant it may not be practical.
