While it is avocado time here at CoolTop too right now, with different types of avocados and different climates, Nicaraguan avocados are available most of the year—say about 10 months.

The aguacates look delicious, and I definitely agree a big batch of guacamole is called for! But...start boiling eggs? I've never heard of guacamole with boiled eggs before. Is this some regional specialty?
My personal favorite recipe: chop up a little onion, a little garlic, squeeze in a limon or two, and add a dash each of cumin, black pepper, and - if you like it spicy - cayenne. Yum! Or just slice them and put a few drops of soy sauce on top...a trick I learned from a Japanese friend years ago and still love.

Hey what happen with the onions and the lemon ??
Yopu must chop the onions add the lemons salt , mix it ,get tortillas and then,,you can look for the Flor de CaƱa , but personaly i prefer pitahaya.
I was just throwing some ideas on how to make use of the basket full of aguacates!. Thanks for adding the missing ingredients to complete the recipe for this tasteful nica dish.

Time for Guacamol
Start boiling some eggs, chop the aguacates and bam! kick it up a notch. While you are at it, get some Flor De Cana and call it a day.
