In the center of Nicaragua lies the department of Boaco, where "the rivers are made of milk and the mountains are cheese". The hilly area of approximately 4,244 square kilometers has a population of over 173,000 spread over six municipalities. Its motto alludes to its strong agricultural sector known for milk, cheese and cattle. Apparently, there are enough cattle that some speculate they out number the people.
