At the CoolTop facility, we intend to offer some "interesting" food choices. While we certainly will have gallo pinto available, we want people to have some options not typically found in this area. As I was making some corn muffins this morning, I came up with an idea that could be win-win for us and a person who wants to get a bit of experience in non-Gringo Nicaragua. If you are a good cook (that doesn't necessarily mean a professional cook) that can make some interesting dishes and feel comfortable teaching others what you know, this may work for you. And, no, you won't have to know Spanish but will certainly learn some. The idea is to exchange your knowledge for some time at our facility. Let's say you are really good at baking. You show our staff how to bake some interesting things (I thought of baking just because I was making muffins this morning and they are typically not found here). In return, you get a place to stay. This might be as simple as you get a room for the night and teach for a couple of hours in the morning. Or, you might be an expert is a particular cuisine (let's say Italian or Mexican) and would spend a few days showing people how to make various dishes. The idea is that we want to be totally flexible to make this win-win. What about Spanish? If you are fluent, great. If not, we will have a bi-lingual person there to help. Thus, you will get an opportunity to learn or improve your Spanish. That leaves where and when? Where is easy, we are located in the Tisey reserve near Estelí. (Extra credit for people from Denver or the equivalent as we are at an altitude of about 4600 feet.) When? To be honest, we don't know yet as we are just building the facility but not before November for sure. If this sounds of interest, PM me. My husband has taken many culinary classes and has worked at several restaurants (with a wide variety of dishes). I can bake just about anything (desserts are my favorite). We'd love to help.
I'm down with that offer
I'm Vietnamese and I've taught my Nica wife to cook some Vietnamese dishes. I actually helped cater my friends' wedding down in Iguana. A lot of the ingredients can be found in Managua. I'm sure I can help out.

great idea
fyl, count me in. Would love to participate. I was a professional chef for 29 years, mostly in the Caribbean but I have not forgotten good old German food. Been to Nica twice, well the first time just for a day but it was enough to go back for two weeks in 2005. My Spanish sucks but I am improving since I have a Spanish speaking girlfriend. As far as timeing is concerned, summer works better for me, so how about this time in 2009???
Great Idea
Great idea. Having been here in Nicaragua they could use some more ideas to add to the menus. I would be interested to teach cooking Mexican style from Colorado,and New Mexico and I have dabbled in Italian making my own pasta and baking at the Mile Hi doesn't seem to complicated I think it's the moisture here in Nicaragua. Any count me in. Bea

I really like the part about staying for free, but about the only thing I could teach them about cooking in how to make biscuits and gravy --mmmmmmm :-)
I am a good teacher though, if you ever need a boating safey class or maybe a computer class --I would be happy to help.
