Banana Wine RecipeSubmitted by fyl on 8 May, 2008 - 11:00.
Many years ago I made some banana wine. I had pretty low expectations but it was actually excellent. I would like to give it a try again but I don't have my recipe from over 30 years ago. I have seen some but I am wondering if anyone has actually made banana wine and has a recipe attached to a success story. ( categories: )

Wine making
Here is a link to a good winemaking manual that details just about everything needed to know about winemaking. It was even used as the text for a university enology class I took. www.wihomewinemakers.com/files/winebook.pdf
It includes some recipes for various fruits like apple, pears plums etc, but no banana recipe. But basically, all wines are made the same. I've made cherry, apple and pear wines following these recipes with good results - I haven't killed anyone.
One thing to remember is the higher/lower the sugar content the higher/lower the alcohol content will be. Both over ripe fruit (too much sugar resulting in high alcohol killing the yeast) and too green fruit (not enough sugar to support the fermentation process) can both be problems. Ideally, you want a sugar content in the 20-30 brixs which can be measured with a cheap brixometer purchased on ebay.
Really the only other concern is careful sanitation practices to avoid any funky growths and you should be able to make decent wine from practically anything with sugar...yummmm gallo pinto wine; now theres an idea worth trying!
